Loving Local: Gluten-Free Ancho Chili Chicken Quesadillas

This summer we’ve had a farm share at local CSA Mountain View Farm in Easthampton, MA. That means fresh vegetables every week and access to local eggs, cheeses, and more.  Naturally, we are delighted to participate in the Loving Local: Celebrating the Flavors of Massachusetts blogathon this week in celebration of Massachusetts Farmers Market Week.  The blogathon is hosted by our new friends of the blog In Our Grandmothers’ Kitchens, Massachusetts Department of Agricultural Resources and Mass Farmers Markets.  If you’d like to make a donation to Mass Farmers Markets, please visit here.

What did we make for this special ocassion (and also for our newlywed friends Karo and PJ)?   Ancho chili chicken with sauteed onion and tomato plus cheese, sour cream, and pineapple peach salsa.  Spring mix with balsamic dressing.  Everything was local and everything was deliciously gluten-free!  Dessert was a pint of Mount Tom’s dark chocolate roasted almond and sea salt ice cream.
