Vegan Cream Cheeses and the Meat-Eaters Who Love Them

Last year Galaxy Nutritional Foods introduced a vegan cream cheese alternative that’s gluten-free.  They recently sent me the two flavors, classic plain and chive & garlic, and I super enjoyed them.  They were smooth and creamy like real cream cheese.  Even bites on warm toast were heavenly.  My only wish?  To have more so that I could make a gluten-free cheese cake…

Galaxy also sent samples of their new vegan mozzarella and Mexican flavor shreds.  While they melt really well, they’re not yet a kitchen favorite.  After a few test recipes, the “cheese” still has a grit about it, probably from the cornstarch base.  While I wouldn’t eat a pinch out of the resealable pouch or cold on a salad, I would include it in hot dishes like mac & cheese or a breakfast scramble.
