GF Stuffed Bell Peppers

The recipe below is a quick and kid-favorite recipe that can be made with beef, ground turkey or without for vegetarians.

What You Need:

6 medium bell peppers
½ pound lean ground beef
2 cups tomato sauce
3 cups cooked rice
1 small onion, finely chopped
½ tsp dried oregano
½ tsp dried thyme
½ tsp salt
½ tsp ground black pepper
1 garlic clove, minced

What You Do:

  1. Halve each pepper widthwise.  Remove seeds.  Place tops and bottoms on plate and cook covered in microwave for 5 minutes.  Remove and cool.
  2. Coat 13×9” glass baking dish with cooking spray and set aside.  Place rack in the middle of the oven and preheat to 375°F.
  3. In a skillet, cook ground beef over medium-high heat for 5 minutes or until browned.  Stir in 1 cup of tomato sauce, cooked rice, onion and spices.  Spoon the mixture into the peppers.  Add tops.  Leftover mixture can be frozen for a quick lunch.
  4. Bake, uncovered, for 20 minutes or until the sauce starts to bubble.  Heat the remaining cup of tomato sauce over medium heat for 5 minutes and drizzle over the stuffed peppers.
