Okay, so I’m a bit obsessed with chocolate after this past weekend. I tried so very hard NOT to eat any chocolate but I caved on Sunday morning.
Inspired by a recipe for Cadbury creme egg cupcakes, I made a gluten-free version using GF King Arthur Muffin Mix and cocoa. The muffin mix was the perfect base and, although it looked good, I nixed the frosting because it would have made it too sweet. We cut the muffins into quarters and they were eaten up super fast.
Hoping to get my chocolate fix with photos, I checked out Smitten Kitchen’s gluten-free section and found a recipe for a chocolate cake roll, if I had any chocolate left, I’d make it!
